2 Great Protein Pancake Recipes For Pancake Tuesday

Want to indulge in some delicious pancakes but don't want to ruin your diet? I've got 2 great protein pancake recipes that taste that are better than the real thing plus they'll keep you full!

I use oat flour for my pancakes, its hard to find and expensive in Ireland so I just buy Quick Oats and put them in my coffee grinder until they turn to flour, you could also use a food processor. If your not worried about your macros or your gym diet simply use ordinary flour, omit the whey protein and use the whole egg. I promise you won't regret trying these either way!




Banana Pancakes : Makes 10 Pancakes

1 1/4 cups of oat flour (or plain flour)
1 tbsp baking powder
1/2 tsp salt
4 egg whites (or 4 whole eggs)
1/2 cup of ripe mashed banana
1 1/2 cups almond milk (or whatever milk you like)
2 scoops vanilla protein (you can leave this out)

In a large bowl combine all the dry ingredients, flour, sweetener, baking powder, salt and protein.
In a separate bowl whisk the eggs, add the banana and almond milk and whisk again.
Add wet ingredients to dry ingredients and whisk to combine.
Spray pan with non stick spray.
Scoop batter with a 1/4 cup measure onto pan. Cook for 3 to 5 minutes on each side.

Serving size 1 pancake

Apple Cinnamon Pancakes : Makes 10 Pancakes

1 1/2 cups of oat flour (or plain flour)
2 tbsp Splenda (or plain old sugar)
1 tbsp baking powder
1/2 tsp salt
1 tbsp cinnamon
4 egg whites (or whole eggs)
1/2 cup almond milk
2 scoops vanilla protein powder (you can leave this out)
1/2 cup or 1 1/2 pots (150g) of apple baby food (I like to use Organix apple & vanilla pureƩ)


In a large bowl combine all the dry ingredients, flour, sweetener, baking powder, salt, cinnamon and protein.
In a separate bowl whisk the eggs, add the apple pureƩ and almond milk and whisk again.
Add wet ingredients to dry ingredients and whisk to combine.
Spray pan with non stick spray.
Scoop batter with a 1/4 cup measure onto pan. Cook for 3 to 5 minutes on each side.
